It is in a healthy environment, at high altitudes, that Gruyerius takes shape. Alpage cheese has long been recognised for its taste qualities. The flora of the alpine pastures brings an extraordinary diversity to the milk processed into Gruyerius.

A unique maturing process

Aged for at least 9 months in the heart of the green Gruyère region, its historical birthplace, Gruyerius develops all its best aromas over the months spent in the cellar, benefiting from a slow maturing process with water and Alpine salt as only ingredients.

Gruyerius is obtained by reproducing ancestral manual gestures with a long cheese-making tradition. Wood-fired production and century-old premises are essential qualities for the production of Gruyerius.
